Family birthday dinners usually feature a birthday cookie instead of a cake. Most of my kid's birthdays run in series of two or three. After cake for the party with friends and cupcakes at school, no one was excited to eat cake.
One year, I used 7 cake mixes in a week. Let me tell you - that's too much cake!
The solution in our house -
THE BIRTHDAY COOKIE!
Our Birthday Cookie is just the traditional Toll House Cookie Recipe. Mix up a double batch and refrigerate. The result will make two 10"
round cookies with a little left in the bowl :)
Using a large spoon, drop four big portions of dough in the pan, lined with parchment paper, spread with a spatula or flour covered hands.
Top cookie with M&M candies.
Cook at 350 Degrees for about 25 minutes until golden brown.
Cool before using or the birthday candles will melt.
Yep, been there, done that!
A 9" cookie will fit into a gallon sized freezer bag. The baked cookie freezes very well and should be defrosted for 12 hours at room temperature.
Just because there's a cookie, doesn't mean we don't like cake . . .
One Bear, a thousand faces!
This Wilton Bear pan is a favorite. John has chosen a version of it every year.
This year's version is Captain America.
I can't make my frosting the bright colors like that found at the grocery stores but stores like Albertson's will let you purchase icing as seen on the Panda Cake and Captain America Bears. I quit trying to create black and just buy it.
A favorite birthday activity!
Fill the trampoline with regular old balloons. Add a little Wyoming wind and let the fun begin.

So Much Fun ...
Fondant is an easy way to make
beautiful cakes that are bright and creative. I will include the steps to make the "Gift Box" Cake below.
The Avenger cake was neat, sorry I don't have a picture without the plastic wrap.
The fondant comes in beautiful colors but I really don't like the taste of it. If you have had luck using flavor, let me know. I always intend to try flavoring but am afraid it will cause the fondant to become sticky. I will let you know if I have any success.
